When Angular encounters "{{...}}", it goes, "Ah-ha! There must be a $scope variable lurking around here with that exact name." It then delves into its treasure trove of scope variables and hunts for it. If it locates the variable, it swaps out the placeholder with the value of that scope variable and takes out the dots.
