Is it possible to display a custom DIV element as a marker on a Google Map using the V3 API, even though it typically only allows images? Are there any workarounds within the standard google map API?

If you're looking for a great little library, check out RichMarker. The documentation can be found here.
When using the constructor, make sure to include the content
property in the json object like this:
var marker = new RichMarker({
position: yourLatLng,
map: yourMap,
content: '<div class="my-flexible-marker">initial content</div>'
});
You can update the content later on by using the setContent
method:
marker.setContent('<div class="my-flexible-marker">new content</div>');
