This error seems to only occur for certain employee records, while all other records load without any issues. What could be causing this discrepancy?

It seems that only certain records are experiencing this issue, and the error message referencing the Value suggests that your code may be trying to access a field in a way similar to the following:
Xrm.Page.getAttribute("<attribute name>").getValue().Value
Because the attribute is empty, the method getValue() returns null, resulting in the error you are encountering.
Based on my initial assessment, the attribute in question could be an OptionSet, Two Options, or Money type (as opposed to types like Single Line of Text which do not have a .Value property).
